Salted Caramel Oats

A few days ago, I created these Salted Caramel Oats and I was so pleased with the result. The topping tastes like rich, creamy caramel, and better yet, it’s filled with protein and fibre that will keep you fuller for longer. It’s perfect for a cosy weekend morning!

Ingredients

Serves: 1

  • 1/2 cup rolled oats
  • 1/2 cup coconut milk
  • 1/2 cup water

Caramel sauce

  • 1 heaped tbsp tahini
  • 1 tsp carob powder
  • 1 pinch Celtic sea salt
  • 1 tbsp maple syrup

For the topping

  • 1 small banana, sliced
  • small handful pistachios, roughly chopped
  • 1 tsp cinnamon

 

Method

  1. Add the oats, coconut milk and water to a pot and bring to the boil. Once boiling, reduce the heat, cover and simmer until the grains are soft. This will take approximately 10 minutes.
  2. In a small bowl, combine the tahini, carob, salt, and maple syrup.
  3. When the oats are cooked through, place a serving into a bowl and top with the caramel sauce, freshly sliced banana, a sprinkle of pistachios and a dash of cinnamon.
