I’m loving this delish recipe from my darling client Melissa and had to share! You can prep them any time and refrigerate them so that you always have a quick, healthy snack on the go.
Ingredients
- 1 cup almond meal
- 2 cups organic desiccated coconut (plus extra for rolling)
- 3 Tbsp. coconut butter
- 2 Tbsp. lucuma powder
- 1 Tbsp. chia seeds
- 1 tsp. vanilla powder
- Zest of 1 lemon
- 1 Tbsp. lemon juice
- 1 Tbsp. stevia
- 1 scoop NuZest vanilla protein powder
Method
- Blend all ingredients in the food processor, adding a bit of warm water to bind mixture as needed.
- Roll into balls, then roll in extra coconut.
- Will keep in the refrigerator for about a week.
