I adore this delicious and warming meal, it’s full of veggies and nourishing goodies to keep you happy and healthy. This is sure to be a dinner winner!
Ingredients
Serves: 2 as a main, 4 as a side (add your favourite protein!)
- 4 zucchinis
- 1 garlic clove
- 2 tbsp ricotta cheese
- 4 Roma tomatoes
- Handful basil – chopped
- 2 tbsp olive oil
- 1-2 tsp rock salt
- Pepper
Method
- Using a carrot peeler – peel zucchini into fettuccine like pieces lengthways
- Fry garlic and tomatoes with 1 tbsp olive oil in a heated frying pan
- Add in some himalayan/rock salt
- I add in a splash of boiling water so the tomatoes soften and turn into a sauce
- Add the zucchini slices to the pan of tomatoes
- Add in the ricotta cheese – makes it deliciously creamy
- Add more salt, pepper and mixed spice (if you wish)
- Cook until zucchinis cook through – for about 5 minutes more. Not too long.
- Plate up – add chopped basil some grated parmesan if you wish
