This porridge is so delicious, but the coconut water makes it really light and fluffy. The perfect addition to your winter morning! DELISH and a GREAT source of protein first thing in the morning!
Ingredients
- 1/2 cup quinoa flakes/oats
- 1 tsp chia seeds
- 1 ½ cups coconut water
- ¼ cup organic coconut cream/coconut milk
- 1 tsp shredded coconut
- 1 tsp stevia powder
- 1 chopped date (optional)
- ½ chopped banana
- Handful of chopped walnuts/almonds
- 1 tsp cinnamon
Method
- Boil the quinoa/oats and chia in the saucepan of water for around 10 minutes.
- If you’re using quinoa, you will see the grain start to open.
- Most of the water evaporates so you don’t need to drain.
- When still in the saucepan add the coconut cream, stevia, date, banana, cinnamon and stir.
- Transfer the porridge into a bowl.
- Top this dish with 1 tablespoon of Cocobella Coconut Yoghurt, cinnamon, homemade granola, berries and more shredded coconut.
