Easy Blender Banana & Dark Chocolate Muffins

This is one of my favourite muffin recipes. It’s so simple and easy; all you have to do is add the ingredients in a blender or food processor and blitz. The result is beautifully light and fluffy muffins that can be enjoyed as an afternoon snack or an after-dinner treat.

Ingredients

Makes: 9 muffins

  • 2 cups almond meal
  • 3 bananas (2 for baking, 1 for decorating)
  • 3 eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • A pinch of sea salt
  • 1 cup dates, pitted and roughly chopped
  • 1/4 cup coconut oil
  • 1/4 cup dark chocolate, chopped
  • Olive oil or coconut spray, for greasing

 

Method

  1. Preheat your oven to 180°C.
  2. Add the almond meal, bananas, eggs, baking powder, cinnamon, sea salt, dates and coconut oil to a food processor or blender. Blitz until the mixture forms a smooth consistency. Once combined, stir through the chopped dark chocolate.
  3. Grease a muffin tin generously with olive oil or coconut oil spray. Spoon the mixture in and top with a slice of banana.
  4. Bake for 35-40 minutes, until the muffins are golden and cooked through.
