Broccoli and Egg Breakfast Wrap

This is the best breaky wrap!! This is not only gluten-free, but it contains the added benefits of dark green leafy veggies.

This is too easy to make.

Ingredients

  • 2 beaten eggs ( or 3 egg whites)
  • 1/2 steamed broccoli
  • 1/2 cup spinach leaves
  • 1 Tbsp. psyllium husk
  • 1 Tbsp. LSA mix ( to bulk it up)
  • 1/2 tsp baking powder
  • 1 Tbsp almond milk
  • Himalayan salt
  • Pepper
  • 1/2 lemon

 

Method

  1. Crush the broccoli and spinach in your food processor until it reaches a smooth texture.
  2. Mix together in a bowl with the other ingredients.
  3. Fry in coconut oil like an open omelette.
  4. Flip it both sides to cook. Leave flat to cool.
  5. I smeared mine with homemade pesto, tomatoes, rocket, avocado, lemon, left over Brussels! Add a drizzle of lemon. You can add anything you wish.
