Banana Bread Pancakes

The best weekend brekkie! Great for the kiddies too! They won’t even know it’s a healthy recipe.

Ingredients

  • 2 eggs or 3 egg whites
  • 1⁄2 cup almond meal
  • 1⁄4 cup ground flaxseed
  • 1 tbsp psyllium husk
  • 1⁄2 mashed banana
  • 1⁄2 tsp baking powder
  • 2-3 drops vanilla stevia liquid • 1 tsp cinnamon
  • 1⁄3 cup crushed walnuts
  • squeeze lemon juice
  • 3-4 tbsp almond milk

 

Method

  1. In a medium non-stick fry pan, melt 1⁄2 tbsp virgin organic coconut oil
  2. Spoon 1⁄4 cup of the mixture into the pan
  3. Use a spatula to press the mixture down so it cooks firmly
  4. Cook for 4 minutes on the first side, then flip and cook for another 3 minutes on the other side
  5. Pile them on your serving plate with extra toppings such as raw nuts or coconut
