I am a big believer in our need to take conscious steps to slow down our lives and look at food as a way to nourish and heal our bodies, but I know that some days it’s just not possible to devote a huge amount of time to breakfast – particularly when there are kids to get to school and early morning meetings.

But no matter how busy we are, none of this is ever an excuse to skip breakfast!
Here are some simple recipes that can be prepared the night before or in just a few minutes, so that you never have to go hungry. Remember, you’re ‘breaking your fast – your body is craving nutrients and fuel when you wake up!

Healthy Bircher Muesli – image above!

This is a healthy version of Bircher Muesli – hard to find! Most Birchers found in cafes are loaded with sugar and cream! This is a quick and easy recipe, perfect  for all the busy bees on the go. You can make a big batch and refrigerate for up to a week. Time friendly recipe I say!

The JSHealth Breakfast Bowl

This breakfast is a smorgasbord, full of antioxidants, protein and healthy fats to jump-start your day. Mix and match your toppings – the combinations are endless! Add it to a jar and off you go!

Banana, Date & Walnut Muffins

Line a cupcake tray with patty pans and fill with batter freeze and then remove from mould and store in the freezer for a quick-bake muffin. Alternatively you can bake them on a Sunday and keep them fresh in the week for an even quicker brekky.

Some other great ideas:

  • Good quality rye toast, sourdough or gluten free toast with smashed avocado, sea salt and chilli flakes.
  • Good quality rye toast, sourdough or gluten free toast with almond butter, banana slices and cinnamon (a personal fave!).
  • Cooked oatmeal topped with banana slices, cinnamon, Greek yoghurt and raw granola.
  • Breakfast bar – recipe here!
  • 1-2 boiled eggs (boiled the night before and placed in the fridge) with a handful of veggie sticks.
  • Homemade gluten free granola with almond milk or Greek yoghurt. Sprinkle with cinnamon. Ps: some health food stores now stock real clean and good quality breakfast cereals/granola – just check they are not too high in sugar. Otherwise see my homemade gluten free granola recipe here!
  • Scrambled eggs served with avocado, goats cheese and pesto.
